  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (30g) almond flour
  • 1/2 cup of granulated sweetener (any that measures 1:1 with sugar)
  • 11/2 scoops (45g) Macro1 ONE Vegan Protein, vanilla
  • A pinch of salt
  • 1/2 brick (113g) reduced fat cream cheese
  • 1 whole egg
  • 1/4 cup (60g) unsweetened applesauce
  • 1/3 cup unsweetened almond milk
  • 1 tsp of vanilla extract
  • 1/3 cup (50g) caramel chips

For the frosting

  • 1/2 cup (113g) reduced fat cream cheese
  • 1/2 cup (113g) plain, nonfat Greek yogurt
  • 1/4 cup (60g) sugar free maple syrup
  • 2 tbsp (20g) sugar free vanilla pudding mix

Instructions:

  1. Preheat oven to 350F.

  2. Pulse together cream cheese, AP flour, almond flour, cinnamon, and salt. Add egg and almond milk. Blend together until smooth. Add protein powder and blend again until a smooth, thick batter forms.

  3. Add caramel chips and pulse into the batter. Spread into a prepared loaf dish. I used a silicone loaf dish (if using glass you may need to bake slightly longer).

  4. Bake at 350F for 25-30 mins or until a knife comes out clean. Let completely cool.

  5. For the frosting, add softened cream cheese and Greek yogurt to a large bowl. Whisk together until smooth and creamy. Add sugar free maple syrup. Mix again until smooth. Add in pudding mix and stir again until smooth. 

  6. Spread over cooled cake. Top with some extra caramel chips if desired. Enjoy!
