Pancakes are something that we all know and love, but sometimes you don't have the time to bring out the pan and make a proper stack of pancakes, so that is where this recipe comes in. It has been a hit over on Instagram, so we had to share it here too: Microwave Blueberry Protein Pancake.

This is one that you really need to use the ONE Protein, as it is a whey + casein blend and perfect for this recipe. Regular whey protein will dry out in recipes, especially when making them in the microwave. The 50% casein in the ONE Protein keeps it moist and perfect for this recipe. 

Flavor combos are endless

As with most recipes, you can customize this one to however you want. Don't want blueberries and would rather have chocolate chips? Go for it. Want to use Chocolate Brownie protein instead of the vanilla? No problem. 

Subbing out ingredients

You can use something else instead of the yogurt, like mashed banana, pumpkin puree or applesauce. The Greek yogurt will keep it with the highest protein, but pumpkin in there could be a great fall twist.

Recipe
1 scoop (34g) Macro1 Nutrition ONE Protein, vanilla ice cream flavor 
1/2 cup (60g) all purpose flour
3/4 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/3 cup (75g) plain, nonfat Greek yogurt
1/4 cup (70g) liquid egg whites
1/4 cup unsweetened almond milk
1/2 cup blueberries
sugar free maple syrup for topping
crushed up cookie / biscuit for topping (optional but delicious)

Instructions

  1. Mix protein powder, flour, baking powder, salt and cinnamon in a large bowl. Add Greek yogurt, egg whites and almond milk. Mix until a smooth batter forms. Fold in blueberries.
  2. Spray a 4x8 dish or microwave safe Tupperware with nonstick spray. Pour batter into container. Microwave on high for 60 seconds. Check and microwave another 30-45 seconds. Be careful not to overcook or it will start to dry out.
