PB Oreo Protein Cookie Bars

Apparently yesterday was National Oreo Day and I cannot believe I missed it. So, I have spent all morning making up for it having fun in the kitchen with Oreos, ONE Protein, and peanut butter to make some PB Oreo Protein Cookie Squares. That sounds like a lethal combo of deliciousness to me!

There are just under 240 calories and 20 grams of protein in each one of these. I don't know about you guys, but I'd take one of these over a chalky protein bar any day! 

Bottom Peanut Butter Protein Cookie Layer

The bottom layer is a delicious, moist, peanut butter protein cookie layer. Thanks to the peanut flour (PB Fit / PB2), ONE Protein, and coconut flour it is actually quite low in calorie but still moist and packed with protein.

ONE Protein is a must! 

Do not, I repeat, DO NOT try and make this recipe with a whey protein or some other protein. Whey protein will dry out and make these bars have an unpleasant texture. A premium whey + casein blend like ONE Protein is necessary. This is why I developed it, to be the BEST baking protein on the market!

Oreo Protein Frosting Layer

The layer on top is an Oreo Protein Frosting layer. I could seriously just eat it by the spoon. It is amazing. It uses just 3 ingredients: ONE Protein, greek yogurt, and some Oreos.

Anyway, enough of me talking about the recipe, let's get to the recipe!👇

 

✅PB Cookie Layer

1 cup (120g) peanut flour (PB Fit or PB2)

½ cup (56g) coconut flour

1 ½ scoops (50g) Macro Supps ONE Protein, vanilla ice cream

½ cup (75g) Truvia sweetener*

½ tsp baking powder

¼ tsp salt

¼ cup (56g) light butter, melted

1 whole egg

1 cup (240mL) unsweetened almond milk

½ tsp vanilla extract

3 oreo cookies, crumbled

 

✅Oreo Frosting Layer

3/4 cup (175g) plain, nonfat Greek yogurt

1 scoop (34g) Macro Supps ONE Protein, chocolate brownie

6 crushed Oreos

 

✅Notes

*Truvia is a sugar free sweetener. It is sweeter than sugar. If you are using Swerve, or another sweetener that measures 1:1 with sugar, use 125g. 

 

✅Instructions

  1. Preheat the oven to 350F. Mix peanut flour, coconut flour, protein powder, sweetener, baking powder and salt in a large bowl. Add melted light butter, egg, milk, and vanilla extract. Gently mix until a smooth dough is formed. 
  2. Crush oreos and mix into dough. Spray a 5x9 baking dish / loaf dish with nonstick spray and line with parchment. Press dough into dish. Bake at 350F for 25-30 minutes. Be careful not to overbake. 
  3. Once cooked, place in the fridge or freezer to let completely cool before adding frosting. While cooling, mix Greek yogurt and protein powder until smooth and creamy. Add crushed Oreos and mix well. 
  4. Spread frosting over cooled peanut butter cookie layer. Cut into 8 squares and enjoy!
